The strawberry kefir popsicles are the easiest to make using only 3 ingredients, and healthy for a summer treat.

From the perspectives of Traditional Chinese medicine, I usually don’t encourage eating cold foods. Cold foods harm the digestive system and spleen qi, which can lead to a variety of health issues. But when summer is here, my kids want cold treats like everyone else, and my mommy heart doesn’t want to deny them the enjoyment!

I made these strawberry kefir popsicle treats with the healthiest wholesome ingredients at home. Let’s not kid ourselves that we can eat as many popsicles as we wish, no matter how healthy the ingredients are. The strawberry kefir popsicles are wholesome enough to be served without guilt, but all frozen treats should still be eaten in moderation.

Initially I made organic black bean popsicles – frozen treats made from beans are very popular in my childhood, and super yummy too – perhaps I will share the recipe another time. It turned out my boys weren’t fans of black beans, so I ended up trying different recipes.

I always have an abundance of home-made kefir, and had many success of using kefir in various recipes. I made a really delicious mango kefir icecream a couple years ago. Again, these strawberry kefir popsicles turned out amazing!

Equipment

  • Popsicle Mold

Ingredients

  • 2 cup whole milk kefir, organic
  • 2/3 cup strawberry, organic (fresh or frozen)
  • 1/4 cup honey, unpasteurized

Instructions

  • Stir the honey into milk kefir until evenly mixed.
  • Cut strawberries into small pieces, then scatter into the kefir mixture.
  • Pour the mixture into popsicle mold. Freeze for 6 hours or until completely hardened.
