Lobster Cakes (Gluten-Free, Keto)
Ingredients
For Lobster Cakes
- 1/2 pound cooked lobster meats picked through and roughly chopped
- 1/2 cup almond flour
- 1 egg
- 2 tablespoons plain mayonnaise
- 1 teaspoon dijon mustard
- 1 stalk green onion thinly sliced
- 1 tablespoon freshly chopped parsley
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon salt or to taste; optional
- 2 tablespoons unsalted butter or your choice of healthy cooking fat
For Tartar Sauce
- 1/4 cup plain mayonnaise
- 2 tablespoons chopped pickles
- 2 teaspoons lemon juice
Instructions
- In a medium mixing bowl, combine the following lobster cake ingredients: chopped lobster meat, almond flour, egg, mayonnaise, mustard, green onion, parsley, black pepper. Add salt into the mixture if your lobsters weren't previously cooked in salt water.
- Shape the lobster mixture into 8 round patties, each about half inch thick and 2 inch in diameter.
- Melt the butter in a flat-bottomed pan over medium-high heat. Place the lobster cakes into the pan and fry 3 minutes, then flip the cakes and fry the other side for 3 minutes, until both sides are golden. Transfer the lobster cakes onto a plate.
- In a small bowl, mix all the tartar sauce ingredients.
- Serve the lobster cakes hot with the tartar sauce.
