Chicken liver pâté is my favourite way to enjoy chicken liver! This recipe highlights chicken liver without mixing with other meats. By doing so, it incorporates as much chicken liver as possible. This liver pâté is so decadent, perfect for holiday parties, as appetizer or snack, or simply on toast at breakfast.

You don’t need complicated ingredients to make a tasty liver pâté. This easy chicken liver pâté contains only 6 ingredients, and so quick to put together! It makes a classic garlic-thyme flavour. Despite being so simple, this chicken liver pâté is elegant to serve for special occasions!
Here is everything you need.
- Chicken Liver
- Ghee
- Garlic
- Thyme
- Salt
- Pepper
You can also use this recipe as a base to create your own flavour variations. Other add-in ideas you can try: onion, shallots, sherry, wine, brandy, lemon juice, balsamic vinegar, sage, bay leaf, chives, parsley, rosemary, red pepper flakes, anchovies, apples, bacon, butter, capers, chicken fat.
How to Make Chicken Liver Pâté?
The workflow to make this liver pâté is so simple.
- Fry up chicken liver with garlic and thyme in a small amount of ghee.
- Puree cooked chicken liver with more ghee in a blender.
- Transfer the liver mixture into a dish, then pour small amount of ghee to seal the top and garnish with thyme.

- There is no need to trim the chicken liver. Because the chicken liver will be pureed in a blender, you won’t taste any tough bits.
- Melt all the ghee at the beginning, then it’s easy to measure out and use the amount you need during the cooking process.
- To simplify the recipe even further, you can skip topping the pâté with ghee at the end. The topper is mostly for aesthetics.
- Remove the pâté from cold storage, return to room temperature to soften before serving.

Can I Freeze Chicken Liver Pâté?
Yes. Freezing chicken liver pâté will greatly extend the storage time.
I like to divide up a batch of chicken liver pâté into small portions. Keep what I will consume within days in the fridge, and store the rest in the freezer. The portions I plan to freeze I put them in small lidded ramekins, or wrap up the dish to seal if the containers don’t have lids.

Easy Chicken Liver Pâté
Ingredients
- 1 lb chicken liver
- 1 1/2 cup ghee divided
- 6 clove garlic
- 1 1/4 tsp fresh thyme divided
- 3/4 tsp salt or to taste
- ground black pepper to taste
Instructions
- Rinse the chicken liver and drain off the water. Roughly cut the chicken liver into 1/2" size chunks.
- Finely mince the garlic.
- If the ghee is solid, warm up in the microwave or in a small saucepan until the ghee turns liquid.
- Heat up a frying pan with 1/4 cup ghee. Add minced garlic and fry lightly until fragrant.
- Add chicken liver chunks and 1 tsp of thyme to the hot frying pan. Stir 3 to 5 minutes until the liver is just cooked through but still tender.
- Transfer cooked chicken liver into the blender. Pour 1 cup of liquid ghee into the blender, then puree the chicken liver. Season with salt and pepper to taste, and then blend a little more until the mixture is smooth and the salt and pepper are evenly distributed.
- Seal the containers and store in the fridge or freezer.
