Creamy Cucumber Salad Ingredients
- Cucumber
- Garlic
- Salt
- Red Onion
- Sour Cream
- Lemon Juice
- Black Pepper
- Fresh Dill or Mint
Cooking Tips
- I prefer using mini cucumbers that have smaller diameters. If I use a large English cucumber, I usually cut it into quarters lengthwise before slicing, to make sure all pieces are better coated in the dressing.
- To finely mince the garlic, you can use a garlic press or citrus zester to save time.
- This creamy cucumber salad tastes better after soaking in the dressing for at least 15 minutes.

Serving Suggestions
This cucumber salad has been my go-to side dish during BBQ season. It goes well with all kinds of meat and seafood, but my favourite is to pair this salad with grilled lamb chops. It adds so much flavours to your meals, no matter how you eat it.
For a creative dish, I added spicy ground lamb inside iceberg lettuce leaves, and then topped with this creamy cucumber salad to make amazing lettuce wraps!
Storage
This salad stores well in the fridge, even overnight. If you plan to make a bigger batch and keep leftovers in the fridge, I recommend cutting the cucumber slices a little thicker to prevent them from turning soft easily.

Creamy Cucumber Salad
Equipment
Ingredients
- 1 large English cucumber or 3 to 5 mini cucumbers, approx. 340g
- 1/2 teaspoon salt
- 3 cloves garlic minced
- 1/4 small red onion thinly sliced
- 6 tablespoons sour cream
- 2 teaspoons lemon juice
- pinch of black pepper
- 2 tablespoons fresh dill or mint, finely chopped
Instructions
- If using mini cucumbers, cut them into thin slices, about 1/8-1/4 inch thick. If using a large English cucumber, cut it into quarters length-wise first, before slicing, so that they can be better coated in the dressing.
- Add all ingredients in a medium bowl, mix well together. This creamy cucumber salad tastes better after soaking in the dressing for at least 15 minutes.
