With layered flavours of herbs, capers, lemon, sweet red onion, smoked salmon and fermented pickle juice dressing, there is no need to add the mayonnaise (although I have nothing against a quality mayonnaise) for an unforgettable potato salad.

I first started making my own fermented cucumber pickles because I couldn’t find a quality pickle product from the grocery store a few years ago. As fermented pickles are fairly easy to make, the benefits were well worth the efforts considering I could avoid additives and pasteurization while growing the probiotic lactic bacteria in my pickles.

The result is, other than delicious crunchy probiotic pickles, I have plenty of probiotic pickle brine leftover, which turned into pickle juice salad dressing and I just couldn’t wait to share my favourite way to use this dressing to make this smoked salmon potato salad shine!

Whenever I can get my hands on organic potatoes, I always leave the skins on for the dishes. Potato skins are more nutrient dense than the flesh. It makes eating potato skins and buying organic potatoes absolutely worthwhile.

With non-organic potatoes, I always peel the potato skins after weighing the pros and cons – I would rather not ingest the pesticide than getting the extra nutrients from potato skins. You probably guessed – finding no organic potatoes available on a grocery trip is definitely not my favourite situation.

Ingredients

Dressing

  • 3/4 cup fermented pickle juice
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic (you can use either garlic preserved in the pickle juice or fresh garlic)
  • 1 tsp dijon mustard
  • 1 tbsp honey
  • 1/2 lemon

Salad

  • 5 medium potatoes (I use organic red potatoes)
  • 2 tbsp capers (stems removed)
  • 1/2 sweet red onion
  • 2 tbsp dill
  • 2 tbsp parsley
  • 8 slices smoked salmon
  • ground black pepper to taste
  • salt to taste

Instructions

  • Cut the potatoes into bite size.  Steam for 15 minutes or until just tender.  Take care not to overcook the potatoes.  Set the potatoes aside and let cool.
  • Finely dice the onion, slice or halve the capers, finely chop the dill and parsley, cut smoked salmon into bite size if desired. Add all to the potato bowl. 
  • Mince the garlic, then combine with fermented pickle juice, extra virgin olive oil, dijon mustard, honey, and juice of half lemon. Whisk together until smooth.
  • Toss the salad and dressing together. Add salt and pepper to taste.

Notes

  1. The dressing is slightly modified from the original pickle juice salad dressing to best suit this smoked salmon potato salad.
  2. There is already salt in the pickle juice, however the amount varies depending on the pickle recipe. More salt to taste will be required in this potato salad. 
  3. You may substitute with any pickle juice you like.  Note that some pickle juice don't have probiotic properties.

    Oh my goodness! That pickle juice dressing makes SO much sense! If you’re going to put pickles in your potato salad anyway, why not punch up the flavor with a probiotic dressing like that! Genius!
