Avocado salad in sun-dried tomato dressing is one of the most delicious way to eat avocados paired with fresh heirloom tomatoes. The sun-dried tomato dressing is so versatile that I use it in all sort of dishes, truly a star on it’s own!

Hot summer weather means little cooking in the kitchen, more salads and seasonal produce. Although this recipe is named avocado salad, we are celebrating the in-season tomatoes too!

When I was working my IT career in corporates 10 years ago, I used to make a salad like this one often, after a 12-hour day at work. Sliced up avocado, tomato, with a drizzle of store-bought sun-dried tomato dressing, and I would call it dinner. It was quick, filling and reasonably healthy.

Now I know better, I make my own salad dressing from scratch, no-more store-bought, because I have better control of the ingredients that go into it. I also rarely eat avocado salad alone for dinner any more, instead having it as a side dish. So much progress!

This recipe makes more sun-dried tomato dressing than you need.  Store the rest in a mason jar in the fridge.  The sun-dried tomato dressing is good on so many things, such as green salads, zucchini noodles and grilled chicken.

Ingredients

Avocado Salad

  • 2 ripe avocado
  • 1 heirloom tomato

Sun-dried Tomato Dressing

  • 2 tsp unpasteurized honey
  • 1/4 cup sun-dried tomato
  • 1/2 cup balsamic vinegar
  • 3 cloves garlic
  • 1 1/2 tsp oregano
  • 2 tsp fresh ground black pepper
  • 1 1/2 cup extra virgin olive oil
  • 1 tsp salt

Instructions

  • Place all salad dressing ingredients in a food processor, blend well. This is more than you need for the recipe, store the dressing in a mason jar in the fridge. 
  • Cut 2 ripe avocados in half. Peel and remove seeds. Dice the heirloom tomato. 
  • Arranged the diced tomato on top of the avocado, and drizzle with the sun-dried tomato dressing to taste.
  • (Optional) Serve on a bed of salad greens.

    This is such a fun and beautiful salad. Sun dried tomatoes are one of my favorite things, but I rarely get to enjoy them. I love that you have them in this dressing paired with fresh, heirloom tomatoes.
