Using A Electric Mixer
This ice cream recipe is as simple as can be! You don’t need an ice cream maker to make this ice cream, however I highly recommend an electric mixer. I use a hand mixer to whisk all the ingredients until stiff peaks form. A hand mixer is inexpensive. Besides, whisking cream with an electric mixer is much faster and less labour-intensive than whisking by hands. You can also use a stand mixer.
Yield and Serving Suggestion
Recipe Yield
If you add up all the ingredients in the recipe below, they are only 2 and 2/3 cups in volume to begin with. However, whisking the ingredients with a mixer adds air into the cream, therefore increasing the total volume of the ice cream. Adding air into cream also makes the ice cream creamier. As a result, this recipe makes about 4 cups of cannabis ice cream when finished.
A standard 1/4-cup size ice cream scoop makes a 1/2-cup size ball of ice cream. We will use this serving size (1/2 cup ice cream) when calculating number of servings and dosage here.
The 4 cups of ice cream yielded from this recipe, equals 8 servings (scoops). Each serving (scoop) of ice cream contains 1/2 teaspoon of my homemade cannabutter. See the cannabutter recipe for more details on potency and usage. Note that if you are using another source of cannabutter, you should not reference the serving suggestion here.
Serving Suggestion
To enjoy the therapeutic benefits of cannabis, I suggest starting with 1 serving (1/2 cup) of this cannabis matcha ice cream. Allow 1 to 3 hours for the weed ice cream to take effects after consumption. You may eat more if you feel comfortable and no adverse effect.
I created this ice cream recipe to be low-dose, so that folks can enjoy the ice cream without feeling overwhelmed by the effects of cannabis. Because it’s impossible to measure the CBD and THC amounts in homemade edibles, I am only sharing the serving suggestion based on my own experience and those of my friends who taste-tested for me. Even if you follow my cannabutter recipe exactly, the strength of your cannabutter and ice cream can still vary depending on the plants you cook with.
With my homemade batch, most people can eat 1 to 2 scoops of this ice cream for only a mild buzz, calming and relaxing experience, and better sleep.
However, if you have a fairly high tolerance level to cannabis, you may be able to double, triple or even quadruple your consumption of the amount of CBD and THC in the suggested serving above. It’s unlikely though for anyone to eat more than 3 scoops of ice cream at a time, but you can increase the potency of this ice cream recipe as needed.
Adjusting Potency of the Cannabis Ice Cream
There are 2 ways to adjust the potency of this cannabis ice cream. One is by changing the potency of the cannabutter, the other is by changing the amount of cannabutter used in this ice cream.
To change the potency of the cannabutter, simply change the cannabis-to-butter ratio in the cannabutter recipe. For example, if you want to double the strength of the cannabutter, use 1/2 cup of cannabis instead of 1/4 cup in that recipe, but leave the amount of butter unchanged.
It’s pretty straight-forward to change the amount of cannabutter used in this ice cream recipe. For example, if you want to double the strength of the cannabis matcha ice cream, use 8 teaspoons of cannabutter instead of 4 teaspoons in the recipe below, but leave all other ingredients unchanged.
It’s up to you which method you want to use to adjust the potency of this ice cream. Because cannabutter is so frequently used in many edible recipes, keep in mind that changing the potency of cannabutter will affect all other edibles you are making with the cannabutter.

- 2 cups whipping cream
- 1/2 cup honey unpasteurized
- 4 teaspoons matcha powder
- 4 teaspoons cannabutter melted
Instructions
- Add all ingredients in a medium mixing bowl.
- Use a hand mixer (or a stand mixer) to whisk the mixture until well combined and stiff peaks form.
- Transfer the thickened mixture into a freezer-proof container, covered.
- Freeze the ice cream for 6 hours or until completely hardened.
