The first time I made green goddess dressing many years ago, I was immediately hooked on the flavour.  It was summer time, the idea of using a ton of fresh herbs was extremely fitting. I also ate a lot of salads and barbecued meats and vegetables during the warm weather days, and found myself dipping every bite into the green goddess dressing.

Over time, I tried making variations of this addictive dressing, with different combinations of ingredients, and ate it throughout the year. I love the version I am sharing with you all today, featuring kefir, avocado, fresh herbs and MCT oil. Besides how wholesome and nutritious the recipe is, it also reminds me of summer.

Ingredient Notes

  • Avocado: A touch of beautiful green and rich in fibre, B-vitamins, vitamin K, minerals and oleic acid. Avocado adds creaminess to the dressing, instead of using mayonnaise, making this recipe vegan friendly too.
  • Milk Kefir: One of the best sources of probiotics, and part of the traditional diet. Milk kefir made from real kefir grains contains more strains of beneficial bacteria than yogurt. Since I have a constant supply of homemade kefir from organic whole milk, I often replace yogurt with kefir in recipes. 
  • Fresh Herbs: I love a generous handful of fresh herbs in the kefir avocado green goddess dressing. Not only nutrient-rich, parsley and cilantro play key roles in the detoxification process. Cilantro, in particular, is a well-known chelator for removing heavy metals.

Special Tools

  • Food Processor: You need some kind of food-processing kitchen appliance that can smoothly combine all ingredients. In other recipes, food processor is a nice-to-have if you don’t mind mixing by hands; but for this green goddess dressing, a food processor or equivalent is a must – there is no other way around it!
  • Blender: If you don’t have a food processor, alternatively you can use a blender.  I own a Blendtec. It is fantastic.
  • Lemon Press: I can’t live without my stainless steel lemon press. You can’t beat freshly squeezed lemon juice with the pre-packaged kind. I used to own an enamelled lemon press – it was pretty but the coating peeled off eventually. Now I only use stainless steel lemon press and swear by it. 

Green Goddess Dressing Serving Suggestions

What I love about this kefir avocado green goddess dressing is the versatility to pair with almost anything! Here are some ideas: 

  • Raw salad or vegetable sticks: lettuce, radish, watercress, kale, cucumber, celery, bell pepper
  • Roasted vegetables: cauliflower, carrot, parsnip, potato, squash, eggplant, bell pepper, Brussel sprouts
  • Meats: chicken, lamb, beef, pork, kabobs; any meat off the grill or roasted in the oven
  • Seafoods: poached shrimp, pan-fried fish
  • Make a salad bar or platter with assorted items from each of the above categories
  • Use in pita wraps, fajitas and sandwiches

Ingredients

  • 1 avocado, ripe
  • 1/2 cup organic whole milk kefir
  • 1/4 cup fresh lemon juice (from 1 large lemon)
  • 2 cloves garlic
  • 1/4 cup green onion
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh parsley

  • 3/4 tsp sea salt or Himalayan pink salt
  • 1/4 tsp ground black pepper

Instructions

  • Put all the ingredients in a food processor. Blend until smoothly combined.
  • Transfer the dressing into a glass jar. It can be stored in the fridge for up to 3 days.
